Pros and Cons
The Baumalu copper cookware is tinned by hand using traditional techniques, so the brush marks or small irregularities will be visible, this adds old world appeal to the cookware which makes them excellent for display. Hammering the copper by hand is labor intensive and time consuming but it results to a high quality and durable product because the tiny dents left by hammering process reinforces the copper, it also allows for better air and heat circulation. The cookware is fitted with cast iron handles because cast iron do not heat up as quickly as the copper, hence they stay cooler longer. The handles are also handmade, which means there will be slight variations in shape and size, each cookware truly is authentic. The Baumalu cookware is durable, it is typically constructed using copper which is 2mm thick, this results to a more durable cookware with faster heat conduction capabilities. The cookware responds quickly to minute heat changes which allows for a more precise cooking. The heat is also well distributed across the cooking area.
While the tin lining conducts heat excellently, it wears down over a period of time and will need to be re-tinned, unlike cookware which use stainless steel as lining, the Baumalu cookware requires higher maintenance. The cookware also shipped with a thin layer of lacquer to prevent the exterior from oxidizing and scratching, this lacquer layer needs to be stripped off before first use lest the lacquer will burn and leave an unsightly mark on the cookware which may be very difficult (if not impossible) to remove. Acetone is commonly used to rub off the think lacquer layer from the cookware prior to first use. The Baumalu cookware needs to be hand washed, it cannot be placed inside an automatic dishwasher.
You can get Baumalu copper cookware at French-only.com and alibaba.com, it is recommended for the home chef who prizes authenticity and elegance. If you can look beyond the occasional re-tinning, these cookware can last for a long time because of the durable and sturdy construction.
